Improvised lunch

 
I had some leftover potatoes decided to "recycle" them into this enjoyable lunch. A tortilla topped with potatoes, black beans (sauteed and seasoned with cumin, chili powder, salt, pepper, and lime juice), fresh cilantro, and salsa. It was so flavorful I didn't even miss the cheese and sour cream I decided to skip. The lime juice was key.

  1. Yum! That sounds, and looks, absolutely delicious. Will keep this in mind for our couple of meatless days a week. But I love sour cream too much, so I'd have to have it with (especially the organic kind, which is. HEAVENLY.)

    @Marie-Ève: I had more leftovers with some cheese and sour cream yesterday. That was nice too. Though not necessarily better, oddly.
