Using up the Food, Part 1

I was walking home from the metro after a meeting, fully enjoying the warm sunshine and glorious spring weather when the urge to buy fresh vegetables hit. Only I didn't feel like walking to the store and I am consciously trying to eat up most of the food in our Montréal apartment since we will be moving in June. I am trying not to buy too much beyond the essentials, because I don't want to to deal with moving a lot of food or having food waste. So I came home, opened the windows and looked in my fridge, freezer, and cabinets. Noticing I had a lot of cilantro, I went to 101 Cookbooks (perhaps my favorite recipe website) and searched for recipes using cilantro. I decided to try the Pan Fried Chickpea Salad, since I had all the ingredients except leeks, and have had a recent renewed interest in chickpeas.

Can I just say this salad was easy and fabulous? And healthy? I used fat-free plain yogurt, which is low in sugar and cholesterol, and the sauce was still delicious. An added fun aspect is that this salad ends up looking and tasting like it took way more work than it does. I plan to make this as an appetizer when we have company sometime in the future. And now I am already looking forward to eating the leftovers for dinner and I just finished lunch!
